BANANA BREAD PUDDING
1. Place the bread cubes in a dish - pour butter over top and toss to coat
2. In a medium bowl, lightly beat eggs; add milk, sugar, vanilla, cinnamon, nutmeg and salt; stir in bananas
3. Pour mixture over bread cubes and stir to coat
4. Bake @375° (uncovered) for 40 minutes
OR until a knife inserted in the centre comes out clean
Sauce:
1. Melt butter in a small saucepan.
2. Combine sugar and cornstarch; add to butter.
3. Stir in milk and corn syrup.
4. Cook and stir over medium heat until the mixture comes to a full boil - Boil for 1 minute
5. Remove from the heat; stir in the vanilla.
6. Serve warm sauce over warm pudding + Enjoy!
SWEET BERRY BRUSCHETTA
Home-Made Sweet Berry Bruschetta 🍓
made with slices of @zaboucabreads Multigrain..
-Arrange bread slices on baking sheet + sprinkle with brown sugar
-Bake at 400 degrees for 3-5 minutes, until golden brown
-Combine for a creamy spread:
...3 tsp sugar
...6 oz cream cheese
...1/2 tsp almond extract
-Top toasted bread with creamy spread + add your choice fresh berries 🍓🫐
Garnish with Mint Leaves
-TiP: Drizzle with Honey for extra sweetness 🍯
Ingredients
2 1/2 cups Pineapple, diced
2 1/2 cups Coconut Water Ice Cubes
1 tbsp. Coconut Milk

PINEAPPLE-COCONUT
SMOOTHIE
DASHEEN PIE
Method
1. Chop the Dasheen into large chunks and boil until soft
2. Drain and mash the Dasheen with a fork or food processor
3. In large bowl, mix the mashed Dasheen, Butter, finely chopped Parsley & Pimento,
grated Nutmeg, chopped Celery, 1 cup grated Cheese
with Salt and Pepper to taste..
4. In separate bowl, mix the Egg and Milk
5. Add combined Egg and Milk to the Dasheen Mix
6. Put Mix into a greased dish and sprinkle remaining grated Cheese on top
Bake @ 350F
Time: 30 minutes
OR until golden
Ingredients
2 1/2 lbs Dasheen
1 1/2 cup Cheddar Cheese
1 cup Evaporated Milk
2 tbsp Butter
2 Pimento
1 tsp Parsley
1 Egg
1/2 tsp Nutmeg (Optional)
1 Celery Stalk
Salt & Black Pepper to Taste
GUACAMOLE
1 Avocado
1 Lime, Squeezed
1/2 Cup Diced Onion
3 tbsp Chopped Cilantro
2 tbsp Garlic, Minced
2 Tomatoes, Diced
Salt, Black Pepper & Pepper to taste
...
Mash avocado + lime juice together
Mix in onion, cilantro, tomato, garlic
Stir in salt, black pepper, and pepper
And it's ready-to-serve!
ROASTED PINE W/ RUM
Ingredients
100g Brown Sugar
1tsp Chili Flakes
+ extra to serve
1 Pineapple
50g Butter
For the Rum Cream...
160g Can of Coconut
2tbsp White Rum
Method
1. Heat oven to 180C / 350F
2. Create MIX sugar, chili + cracked black pepper in large roasting tin.
Roll pineapple in sugar + leave it laying in the excess.
Dot the top of the pineapple with butter.
3. Roast pineapple in oven for 30 minutes.
Every 10 minutes, baste with the juices,
and when finished, remove from oven to cool.
4. Before serving, baste the pineapple again.
Rum Cream...
1. Whip the coconut cream until it forms soft peaks
2. Fold in the rum
When serving...
Carve into wedges + sprinkle chili flakes
Serve with extra MIX
+ with the Rum cream

Method
1. Cube + Freeze the Cantaloupe
2. Blend with freshly squeezed orange juice
3. Add cold-pressed cane juice to sweeten
And Enjoy!
GARLIC GINGER EGGPLANT
Method
1. Wash and quarter the eggplant.
Once quartered, sprinkle some salt
to remove the excess liquid from the eggplant.
2. Allow to sit for 15 minutes
and pat dry with a paper towel.
3.Preheat oven to 400 degrees.
4. Using a baking sheet or pan lined with foil,
place the eggplant on the dish.
Coat with cornmeal and Tapioca.
Drizzle 1 tbsp of oil on the eggplant.
5. Bake for 10 minutes
and then broil for additional 5 minutes
or until the eggplant has a roasted appearance.
6. Remove from oven.
Sautee the garlic and ginger in 2tbsp of oil
for a minute and then add pimentos.
Add eggplant, soy sauce and vinegar.
Allow to cook for 3 minutes.
Serve hot and top with Chive.

(or cornstarch)

4 Cloves Garlic
2 Pimentos
2 Sprigs Chive
1tbsp Soy sauce
1tsp Rice Wine Vinegar
(or any vinegar)
